Lentils are a cool-season crop best sown early - as much as two weeks before the average last frost, once the soil reaches about 45F - so they mature before high summer heat. In mild-winter, hot-summer areas they do best as a fall-through-winter crop. Give them full sun and loose, well-drained soil rich in organic matter at a pH around 6 to 7; they really struggle in waterlogged ground. Sow seed 1 to 1.5 inches deep (deeper if dry) and about 1 to 2 inches apart in rows 18 to 24 inches apart, and inoculate with lentil-type Rhizobium for nitrogen fixation. They are more drought-tolerant than other legumes but yield better with some moisture; do not overwater. A timely harvest is important to avoid shattering and weathering of the seed.

Black Beluga matures in roughly 80 to 90 days. Harvest when the lower pods have turned brown and rattle and most of the plant has dried down; pull or cut whole plants and finish drying them under cover, then thresh out the seeds. Do not wait too long, as overripe pods shatter and drop their seeds. The little black lentils need no soaking and cook quickly.
Cooked lentils are an outstanding plant protein at about 116 calories per 100 g, with around 9 g protein, a high 7.9 g fiber, a strong 181 mcg folate, and 3.3 mg iron (pair with vitamin C to absorb more).
