Carrots need deep loose loamy soil free of stones; double-dig or use a raised bed amended with sand and compost. Sow seeds 1/4 in deep, keep moist until germination (10 to 21 days), and thin to 2 in apart. Matures at 60 to 75 days. Different colored varieties may mature at slightly different rates.

Rainbow carrot mix matures 60 to 75 days from sowing. Pull when shoulders reach 3/4 in diameter at the soil line. Lift each color at a slightly different time if you can identify them (purple tops often show earlier). Wash and refrigerate in perforated bags up to 6 weeks. Purple carrots have a slight ring of orange flesh under the dark skin; the contrast is dramatic when sliced into rounds.
