Winter melon needs heat, space, and a long season. Sow after all frost in warm soil, or start seeds indoors a few weeks early and transplant once it is reliably warm. Give it full sun and rich, well-drained soil with plenty of organic matter, and lots of room - the vigorous vines sprawl 8 to 12 feet and are usually left to run on the ground (a thick mulch keeps the big fruit clean), though smaller fruit can be trellised with support slings. Space plants 4 to 6 feet apart. Water deeply and regularly and feed through the season, since the huge fruit are heavy feeders. Allow about 120 to 150 days of warm weather to mature full-size storage gourds; harvest before the first hard frost.

Winter melon is ready about 120 to 150 days from planting, when the fruit is full-size and a mature gourd has developed its chalky white waxy coating; the fuzz of young fruit gives way to that smooth wax. Cut the gourd with a few inches of stem and handle it gently to avoid bruising the rind. For long storage, cure mature fruit in a warm, airy spot for a week or two to harden the rind, then keep it in a cool, dry place, where an intact waxy gourd holds for 6 to 12 months. Young fuzzy fruit can also be picked small and cooked right away.
Winter melon is among the lightest of vegetables at about 13 calories per 100 g, with a very high water content, fiber, and vitamin C plus some minerals.
